Spicy hummus

Hummus is a creamy paste made from chickpeas, a traditional dish of Middle Eastern cuisine. Although the base is the same, a chickpea puree seasoned with lemon and tahini oil, in each region they usually incorporate different ingredients, as in the case of the hummus that I bring you today. The chilli pepper adds a spicy and delicious touch to this hummus, which thus becomes an irresistible bite.

Nowadays hummus is widely consumed in many countries, especially those where oriental food came years ago to stay, as is the case in Spain. This dish is perfect to take with slices of toast and with veggies, especially carrot sticks. The combination is perfect and will serve you both for a special occasion and for the menu of the day to day.

Ingredients
  • 500 gr of cooked chickpeas
  • 1 lemon
  • 1 garlic clove
  • 3 tablespoons of tahini, (sesame paste)
  • 1 teaspoon salt
  • extra virgin olive oil
  • 2 cayenne chillies
  • 2 tablespoons sesame seeds
  • Hot paprika

Preparation
  1. If we do not have the cooked chickpeas, the first step will be to cook them in a traditional way, taking into account a previous soaking of at least 12 hours.
  2. Once we have the chickpeas cooked, we begin the preparation process.
  3. First we put a pan on the fire and add the sesame seeds.
  4. We roast the seeds over low heat for 1 minute.
  5. Remove from the heat and let it cool completely.
  6. Afterwards, we place in the blender glass and blend until obtaining a paste.
  7. In this way we will obtain the tahini.
  8. Now we put the tahini, half a glass of water and a splash of lemon juice in the blender glass.
  9. We beat everything until obtaining a smooth cream and reserve in a separate container.
  10. Now we put the chickpeas in the blender glass with a cup of water and blend very well.
  11. Add a tablespoon of tahini and beat again.
  12. Now we put the garlic and the rest of the tahini, salt and the lemon juice in a mortar.
  13. We mash well until obtaining a thick paste.
  14. We add this mixture to the chickpeas and add a drizzle of olive oil and the previously washed chillies.
  15. Blend very well until obtaining a creamy cream.
  16. To finish, add a pinch of hot paprika and mix again.
