Chicken stew with artichokes and peas

I am a lover of stews, I do not rule them out of my diet even in summer, although I do consume them more occasionally then. This chicken stew is a very complete dish thanks to its great contribution of vegetables and it is a way of introducing them into the diet of those who most resist them.

As every stew requires its cooking time, a time that you can take advantage of to read or do other housework, time is no excuse here! The aroma that this will give off in your kitchen chicken stew and its flavor will encourage you to repeat it more times, I'm sure. Ingredients

  • 6 chicken thighs
  • 8 artichoke hearts (canned)
  • 2 onions
  • 2 Carrot
  • 1/2 red pepper
  • 200 g peas
  • 1 glass of white wine
  • 1 bay leaf

Crafting

In a casserole we put poach the chopped onion with a splash of hot oil.  After a few minutes add the chopped pepper and the the carrots cut into wheels and fry until the vegetables are tender, stirring from time to time with a wooden spoon.

Next, add the seasoned chicken thighs to the casserole and the bay leaf and fry until brown the thighs. We then water with a glass of white wine and wait a few minutes for some of the alcohol to evaporate.

Next, we add two glasses of water to the casserole and cover. We cook over low heat 45 minutes or until chicken thighs are tender. We stir from time to time and add more liquid if necessary.

10 minutes before finishing cooking, add the artichokes and the peas to our stew. After that time we remove and serve hot.

It is important for this stew that the artichokes are of good quality; I have used Gutarra Selección artichoke hearts, made in a natural way and really tender. The alchachofas they provide assimilable sugar without insulin and are therefore recommended for diabetics; They also promote intestinal transit, are a natural diuretic and help regulate the functioning of the liver, kidneys and gallbladder.
