Ingredients
  • 1 chicken, chopped
  • 1 cebolla
  • Carrots 2
  • 1 leek
  • 1 hoja de laurel
  • 1 glass of white wine
  • Olive oil
  • 300 g. mushrooms
  • 3 potatoes
  • Sal Island
  • Water

Preparation
  1. We prepare the vegetables. We peel the carrot and cut it into thin slices. Next, we chop the onion and the leek. Remember to wash all the vegetables well, especially the leek, making a cross cut in the green area to remove any dirt that could hide under the tap.
  2. In a large casserole, pour a drizzle of oil and heat. Brown the chicken pieces and once ready, we take them out and reserve.
  3. In the same casserole we put all the vegetables together with a bay leaf and a little salt. We poach the vegetables over medium heat for 10-15 minutes until it takes on another color.
  4. We put the chicken back in the casserole.
  5. We add the glass of wine and stir a little. Cook over medium-high heat for a few minutes so that the alcohol evaporates.
  6. Add a couple of glasses of water, cover the casserole and we cook over medium heat for about half an hour.
  7. After that time, we introduce the mushrooms and we uncover the casserole. We lower the heat, stir and cook a few more minutes so that all the water evaporates.
  8. Meanwhile, we fry the potatoes.
  9. Season the pollor if necessary and serve with the potatoes.
