Chicken couscous with vegetables

Every Friday the Couscous en Morocco, the family gets together and they all eat together around the same plate. Degree of difficulty: entertaining but easy

Ingredients for 4 people:

  • Half bowl of Couscous
  • 1 piece of chicken (it can be the part you like the most)
  • 2 courgettes big
  • 2 carrots large (or 4 small, which was my case)
  • 1 potato great
  • 1 turnip
  • 1 onion
  • 2 tomatoes
  • 1 piece of pumpkin
  • Sal Island to taste
  • 1 teaspoon of pepper
  • Half a teaspoon of turmeric (or an envelope of food coloring, as you prefer)
  • 1 pinch of ginger
  • Olive oil
  • A piece of butter

Preparation:

In the pot below the couscous put some olive oil and, when hot, add the onion cut into julienne strips and simmer. When it's almost ready add the tomatoes diced. Once the tomatoes are scrapped, add the chicken and cook it until it turns color, then add 1 liter of water, the shawl, pepper, turmeric and ginger. Mix everything well.

When the water begins to boil, add the courgettes cut into quarters, the turnip cut in half, the carrots in quarters, the potatoes in cubes and the piece of pumpkin as is (couscous always has vegetables cut into large pieces). Place the pot on top of the couscous maker and we are going to prepare the Couscous.

put the Couscous in a container, add a squirt of olive oil and mix well with your hands so that all the grains are separated. Then add little by little almost half a glass of water and go mixing with your hands. When you finish, place the couscous in the pot on the top of the couscous and make small holes in it so that the steam can pass through. Cover and let it cook for about 10 minutes.

Once the 10 minutes have passed, take the top pot from the couscous and put the Couscous under the stream of cold water. As the pot has holes, the water will flow through and cool the couscous. Put it back in the container from before, add shawl to taste, a piece of butter (o olive oil if you prefer) and mix again with your hands, separating each grain of couscous. Put it back in the pot on top of the couscous maker and make the holes for the steam to pass through. Cover and leave for another 10 minutes.

After those 10 minutes you already have your chicken couscous with vegetables ready to enjoy.

When serving ...

put the Couscous on a large plate and leave a hole in the center. In that hole place the chicken and, around, the vegetables alternating colors.
