Ingredients
  • 1 package of marías cookies
  • 100 gr. of butter
  • 500 ml. whipping cream
  • 500 ml. milk
  • 2 sachets of curd
  • 120 gr. sugar
  • 350 gr. cheese spread
  • 50 gr. pine nuts
  • For the caramel sauce:
  • 200 ml. whipping cream
  • 50 gr. sugar
  • 40 gr. of butter

Preparation
  1. We prepare all the ingredients. The first thing will be to make the cheesecake.
  2. First we will crush the cookies, put them in a bowl and add the melted butter, mix it well. We take the mold where we are going to prepare the cake that is removable. We put the cookies in the bottom of the mold making the base. We keep it in the fridge.
  3. In a saucepan we put the cream, half of the milk, the cheese and the sugar, stir and let it melt over medium heat. We will put the other half of the milk in a cup and add the two envelopes of curd and mix it well until they are well dissolved. We will add this to what we have in the saucepan little by little, we will let it cook until it begins to thicken. We put out the fire.
  4. We take the mold out of the fridge and add the mixture that we have from the cheesecake. We put it back in the fridge for 3-4 hours or until it is well set.
  5. We will toast the pine nuts in a pan over very low heat, so that they do not burn, you just have to toast them to give them more flavor.
  6. Now we are going to prepare the caramel. We put a saucepan over low heat. Add the sugar and butter; little by little the caramel will be made. When it begins to take on a very light color, remove from the heat and add the cream. We stir, put on the fire and let it finish cooking and until it is like a cream. The fire is always low, so that it does not burn and does not take a bad taste.
  7. Now we assemble the cake. We take the cake out of the fridge, disassemble it and put it in a source where we are going to serve it. Add some pine nuts on top, then the caramel. We will put the remaining caramel in a jar to serve.
  8. And it only remains to taste this delicious cake. You can prepare the part of the cake the day before. If you don't want to make caramel, you can put liquid caramel, the one used for flan, or dulce de leche, chocolate…. She is very good with everything that is put on her.
