'Tequeños' in Venezuela and 'cheese fingers' in Colombia. Today we cross the pond to bring you a popular snack that consists of wrapping a stick of white cheese in a fried wheat flour dough. It is a simple recipe that, however, requires getting your hands dirty.

Tequeños can be served as a starter or as another dish in a quick snack dinner. They are commonly served accompanied by some sauce, either tomato, honey and mustard, sweet pepper, guacamole or hot sauce. They are very easy to eat and are liked by both adults and children if they are very crisp.

Ingredients
  • 280 g. wheat flour
  • 1 teaspoon yeast (royal)
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • 1 large egg at room temperature
  • 56 g. cold butter
  • 6-7 tablespoons of ice water
  • 300 g. of white cheese (or any variety that melts well) on sticks of 10 × 1 cm.
  • Olive oil

Preparation
  1. In a large container, we mix the flour, yeast, sugar and salt.
  2. We make a hole in the center and we add the egg, diced butter and water.
  3. We stir with a spoon of wood and we continue kneading with our hands until the ingredients begin to compact.
  4. We keep kneading the dough on the counter for 5 to 8 minutes until the flour is fully incorporated and the dough is smooth.
  5. When we have a more or less smooth ball, we return it to the bowl, cover it with plastic wrap and let rest at room temperature 30 minutes.
  6. After 30 minutes, flour the work surface and the roller. We spread the dough forming a rectangle (24 × 32 cm) to a thickness of half a centimeter.
  7. With a pizza cutter or sharp knife, we cut strips about 2 cm wide; We will get about 12 strips.
  8. We roll over each strip before filling them so that it is as thin as possible.
  9. We wrap each stick of cheese in one of the strips. We start by holding one of the ends of the dough on one of the ends of the stick and we turn the dough around the stick, slightly overlapping the previous round, until it is completely covered. We pinch at the ends so that they are well sealed.
  10. We fry the sticks in plenty of hot oil for 3 or 4 minutes on each side, until golden brown.
  11. We deposit them on absorbent paper to eliminate excess fat and serve with a sauce.
