Cheese risotto

Cheese risotto a traditional dish of Italian gastronomy. Today I propose you the simple and uncomplicated risotto, the typical risotto with cheese that can be made with any cheese that is creamy, such as Parmesan or a mixture of cheeses.

It seems a complicated dish since you have to give the point to the rice, but the truth is that it is quickly taken and I assure you that you will like it, at home since we tried it we like it, it is also a simple and fast dish.

Ingredients
  • 1 liter of chicken or vegetable broth
  • 400 gr. of normal rice or the Arborio
  • ½ onion
  • 125 ml. white wine
  • 3 tablespoons heavy cream or cream for cooking
  • 3-4 tablespoons Parmesan cheese or a shredded cheese mix
  • Sal Island
  • Pepper
  • 3 oil tablespoons

Preparation
  1. We put the broth to heat in a saucepan.
  2. We put a frying pan over medium heat, finely chop the onion and put it to fry in the pan.
  3. When the onion is transparent we add the rice, we will stir it, mix it well with the onion and the oil for 2-3 minutes.
  4. Add the wine little by little, stirring for 3-4 minutes, until the alcohol evaporates.
  5. Now we will add a saucepan of hot broth to the rice, we will stir until it is absorbed, we will continue adding another saucepan of broth and stirring and let it be absorbed by the rice and cook at the same time. We will be like this for about 20 minutes.
  6. As the rice cooks, the mixture thickens.
  7. When the broth is finished and the rice is cooked, we turn off the heat.
  8. Add a little salt, pepper and the grated cheese, we will stir ben until the cheese is melted and we have a creamy texture and it is well mixed.
  9. We immediately serve on plates and sprinkle with a little parsley and grated cheese.
  10. And ready to eat!!!
