These, we will add them to a small pot along with olive oil until they are well poached. Then we will add the meat and sauté it for a few minutes. Then, we will add white wine and, when the alcohol has evaporated a little water, and we will let it reduce until there is no broth. In addition, we will add the spices.

At the same time that the meat is being made, we will do the second step which is to make the mash. For this, we will peel and dice the potatoes and cook them for about 20 minutes in salted water. Then, we will drain them and squeeze them with a fork. Then, in a small saucepan, add the butter and bring it to a low heat. When it is melted, we add the potato little by little, and then the milk, until we get a smooth cream. Finally, we will add the salt and the nutmeg and we will give one last shake to integrate them.
