Celiacs: gluten-free spinach pudding

This healthy spinach pudding recipe is specially created for all those who suffer from gluten intolerance since it is composed entirely of foods that are allowed and suitable for celiacs.

Ingredients:

750 grams of spinach
3 tablespoons gluten-free flour
50 grams of butter
skim milk, a splash
300 grams of cottage cheese
4 eggs
1/2 cup of grated gluten-free cheese
Salt, pepper and nutmeg, to taste

Preparation:

Wash the spinach and cook it with a pinch of salt. Then drain them, chop them and sauté them in the butter. Add the gluten-free flour, a splash of skim milk and stir until it thickens.

Next, mix the spinach with the cottage cheese, the lightly beaten eggs, the grated gluten-free cheese and season to taste. Pour the preparation into a buttered pan and bake in a double boiler for approximately 45 minutes. Finally, remove the pudding from the oven and you can unmold and serve it.
