Celiacs: gluten-free puff pastry in thermomix

For all those who suffer from gluten intolerance, today I propose to prepare a simple recipe for gluten-free puff pastry, using the thermomix and can be used in preparations such as tartlets or empanadas.

Ingredients:

250 grams of very cold butter (cut into small pieces)
250 grams of gluten-free flour
120 cc. of ice water
Salt, a pinch

Preparation:

Place all the ingredients in the thermomix glass and program 20 seconds at speed 6. Then, remove the dough from the glass and form the bun. Then wrap it in plastic wrap and put it in the fridge for 20 minutes.

When the dough is cold, roll it out with the rolling pin and form a rectangle. Then fold it into three parts. Turn the dough and carefully stretch it again, repeating the previous operation. Go back, turn the dough and stretch it again and fold it again as in the previous steps. Finally, cover the dough with a canvas and place it in the refrigerator until it cools well and then you can use it.
