Celiacs: Gluten-free pear cake

If you suffer from celiac disease, you surely need a variety of recipes. Today I propose to prepare a simple and special recipe for all celiacs with gluten-free foods that they can enjoy at any time of the day:

Ingredients:

150 grams of butter
150 grams of sugar
8 eggs
zest of 1 lemon
200 grams of gluten-free flour
1/2 kilo of pears, chopped (can be canned)

Preparation:

Beat the butter in a bowl with the sugar until the mixture is very creamy. Add the yolks one at a time and mix very well between one and the other, then the lemon zest and the previously sifted gluten-free flour, and mix with a wooden spoon.

Next, add the egg whites beaten to the point of snow and mix with soft and enveloping movements. Place this preparation in a mold greased with a little butter and sprinkled with gluten-free flour. Spread the chopped pears on top and cook in a soft oven for about an hour. Finally, when you remove it from the oven, let it cool for a few minutes before cutting the portions and serving.
