Battered cauliflower with spicy tomato sauce

A rainy day like today is perfect to prepare this cauliflower battered with spicy tomato sauce. Why? Because even though the recipe is simple, it requires following different steps. Yes, it is a somewhat laborious recipe, although to be completely honest, the oven does most of the work.

What you will have to do to prepare this battered cauliflower is to stain your hands. Since after a first batter with a high spice tempura and some crispy kikos, the cauliflower goes through a slightly spicy tomato sauce to finish achieving that appetizing point that makes it a perfect starter, side dish or main dish.

This cauliflower battered with spicy tomato sauce can be served as a starter or garnish of different meats, but also become a unique dish if we combine it with a cup of rice three delights, for example. Do you want to prepare it?

Ingredients
  • 400g. cauliflower
  • 80g. chickpea flour
  • 1,5 teaspoons smoked paprika
  • ½ teaspoon garlic powder
  • ⅛ teaspoon of ground black pepper
  • ½ teaspoon of salt
  • 1 teaspoon of apple cider vinegar
  • 130 ml of water
  • 100 g. roasted corn or crushed kikos
For the tomato
  • 150 ml. tomato sauce
  • ½-1 teaspoon hot sauce

Preparation
  1. We divide the cauliflower into florets and we reserve.
  2. We preheat the oven to 180ºC
  3. Later in a bowl we mix the chickpea flour with all the spices with a fork.
  4. Now, we add the vinegar and water and stir until there are no lumps.
  5. We pass the cauliflower florets through this mixture first and for the crushed kikos later and we are depositing them on a baking tray lined with greaseproof paper or a silicone sheet.
  6. Bake for 30-40 minutes at 180ºC or until they begin to take on a slight golden hue.
  7. After we take them out of the oven, we place on a wide dish and we pour the tomato sauce previously mixed with the hot sauce. We spread all the florets well and return them to the baking dish.
  8. Bake 30 minutes more at 180ºC and remove from the oven.
  9. We enjoyed the spicy tomato sauce battered cauliflower with our favorite sauce and side.
