One thing happens with cauliflower, you either like it or you hate it but today we bring a recipe for those who say they don't like it, some cauliflower and cheese cakes will be the solution for everyone to eat at home.
Today's recipe is a simple recipe, very simple, we make it in the oven, so we stain little and it is very light, and having cheese among its ingredients makes no one suspect that the main ingredient is cauliflower. We are ideal to "cheat" one another. Let's go with the recipe!
- ½ kg cauliflower
- 2 large eggs
- 120 gr chopped onion
- 120 gr soft cheese
- 100 gr breadcrumbs
- some basil leaves

- We chop the cauliflower as small as possible, if we have an electric grinder much better.
- We put it on a plate and take it to the microwave. We will cook it for about 8 ′. Let it cold down.
- On the other hand, in the mincer we also chop the onion and basil.
- In a large bowl we put the cooked cauliflower, the onion and the basil.
- Now we add the breadcrumbs, the grated cheese, the eggs and a pinch of salt. We mix well. We have to obtain a dough that is easy to work with.
- Ready dough, now we take the tray from the oven and put greaseproof paper on it.
- With the help of a couple of spoons we are taking portions as if they were croquettes. We are depositing them on the tray. We crush them a little bit.
- We go to the oven that we will have preheated to 250ºC. Bake for about 20 ′, the cupcakes will be golden and crisp.
