Peppermint carrot soup

How is the weather in your lands? It's awfully cold around here, it's the first time I've seen such low temperatures around here, so when it's time to eat, the only thing we want is something very warm. The soups They are good allies against the cold and for dinner they are great because they are also light, easy to make and very tasty. The one that I bring you today is a carrot soup somewhat special, since it has an egg and is flavored with mint What do you think!.

Preparation time: 30 minutes

Ingredients for 4-5 people:

  • 3 carrots
  • 1 onion small (or medium large)
  • A sprig of mint
  • Sal Island
  • Pepper
  • 1-2 eggs
  • Noodles

Preparation:

In a pot we add 1,5 liters of water and bring them to a boil. Then we add the carrots cut into pieces, the onion, the mint, the salt and the pepper. Let it boil until the carrot is tender.

When it is ready, remove the mint and the vegetables, reserving the broth in the pot.

We put everything through the blender, except the mint (along with a little broth to make it easier).

Then we add the puree obtained to the reserved broth in the pot and stir.

We already have the base of our soup, which must be liquid so that the noodles can be made. In case when adding the puree it has become very thick, you can add a little water. You check for salt and we can add the noodles. Finally, when the noodles are ready, add the eggs and stir. And to enjoy!.
