If you are looking for a rich and healthy sponge cake With which to start on Sunday, you have found it! This carrot cake with spelled flour is one of the richest we have tried at home recently. Its ingredients are attractive by themselves, don't you think?
In addition to the ingredients that are supposed to be, this cake has walnuts, raisins and blueberries to make it even more powerful. You can put them all, do without one if you don't like it or substitute it with other nuts such as hazelnuts or pistachios, for example. Do you dare to try it?
- 100 ml. of buttermilk (100 ml. of milk with a splash of lemon juice).
- 75 g. butter at room temperature.
- 110 g. brown sugar
- 3 eggs
- 75 g. grated carrot
- 225 g. spelled flour
- 2 tablespoons baking powder
- 1 teaspoon ground cinnamon
- 50 g. walnuts, raisins and blueberries
- We prepare the buttermilk adding a splash of lemon juice to the milk and letting it rest for 10 minutes until it is cut.
- We beat the butter with the sugar until a fluffy cream is obtained.
- Later, we add the eggs one by one, continuing to beat.
- Add the carrots grated and the buttermilk and mix until well integrated.
- Then we mix the flour with the yeast and cinnamon and sift them.
- We add this mixture to the previous one and mix with a spatula making enveloping movements.
- Add the chopped walnuts, raisins and blueberries and mix again.
- We pour the dough into a mold and take the oven preheated to 180ºC.
- Bake for 45 minutes, approximately, or until when punctured with a stick it comes out clean.
