Carrot and walnut coca

Today I propose a carrot and walnut coca, a spongy, juicy coca since the carrot adds moisture to the cake and that makes it very tender, the nuts finish giving it that crunchy and rich touch.

Ingredients
  • 250 gr. of butter
  • 180 gr. brown sugar
  • 3 eggs
  • 200 gr. whole wheat flour
  • 50 gr. chopped walnuts + a few whole for garnish
  • 150 gr. grated carrots
  • 1 teaspoon of cinnamon
  • 1 teaspoon yeast
  • A pinch of salt
  • 60 ml. milk
  • Sugar glass

Preparation
  1. To prepare this carrot coca with walnuts, we will start by grating the carrot.
  2. In a bowl, beat the butter and brown sugar.
  3. Add the eggs one by one and beat. We put the oven at 180º so that it warms up.
  4. We put the flour, the yeast, the cinnamon and the pinch of salt, all together in a bowl.
  5. We will sift everything with a strainer and we will mix it little by little to the dough.
  6. We beat everything very well, and we will add the grated carrots, the milk and the chopped walnuts.
  7. We will mix everything very well.
  8. We prepare a tray for the oven, line the base of the tray with greaseproof paper and grease it with a little butter.
  9. We incorporate all the dough in the tray.
  10. We put it in the oven, about 30-40 minutes, if you see that it browns a lot on top, cover it with a little silver paper.
  11. You click in the center and if the dry toothpick comes out it will be ready, if you don't leave it for a few more minutes. It only remains to let it cool, we will cover it with icing sugar and some nuts.
