Today I bring you one carrot and leek cream, a delicious starter, simple to prepare for a lunch or dinner. Preparing creams is simple and we have a very large variety of vegetables to prepare them. They can be made from a single vegetable or mixed together for more flavor. They are also quick to prepare and it is an inexpensive dish.
Vegetable creams or soups are light and provide us with many benefits, in this case the carrot and leek cream provides us with many vitamins, it is good for the eyes and the skin. It provides us with few calories that is why they are ideal for weight loss diets.
Now that the heat is coming, we can take hot or cold creams.
- 1 kilo of carrots
- 2 leeks
- 1-2 potatoes
- 200 ml. of evaporated milk. (optional)

- First we will wash the carrots, peel them and cut them into small pieces.
- We wash the leeks and also cut it into pieces.
- We take a casserole, add a little olive oil, add the leeks and the carrots, sauté them for about 10 minutes.
- Peel and cut the potatoes, add them,
- We add water to cover the vegetables, salt and pepper. We let it cook for about 20 minutes or until the vegetables and potatoes are cooked.
- Once the vegetables are cooked, remove a little of the broth and add the evaporated milk.
- We crush everything until we have a fine cream. We taste salt and rectify.
- If it is too thick we will add broth from the cooking.
- You can accompany the cream with a few pieces of toasted bread or ham shavings or carrot pieces.
