Carnival ears, typical carnival recipe from Galicia
Today with more enthusiasm and joy I bring you this carnival recipe. From today until the following week, the good Carnival festivities take place in the province of Cádiz, especially in Cádiz capital, where today the final of the COAC 2013 (Official Contest of Carnival Groups) takes place.
Therefore, and also pay homage to the province of Galicia, I present this typical recipe from there. It's about the Carnival ears or as it is said there, Orellas of Entroido.
Ingredients
- Peel and zest of orange or lemon.
- 2 eggs.
- 500 g of flour.
- 5 g of salt.
- 100 g of butter.
- 120 g of sugar.
- Icing sugar to decorate.
- Oil for frying.
- 200 ml of lukewarm water.
Preparation
Remember that before grating or removing the peel at the fruits you must wash them very well, and if possible rub them with a brush, to remove any substance or bug they have.
With a bowl large, add the water, the pinch of salt, the butter (a little melted), the orange zest, the normal sugar and the eggs. We will mix everything well until we get a light cream without lumps. Then we add the flour until we get a manageable dough with a soft touch and a damp appearance. We will let the dough rest for at least 1 h.
Once the dough is ready and rested, we will proceed to stretch it on a smooth surface. Then we will cut triangle shaped dough pieces to make them look more like pig's ears. The thickness of the dough must be thin, at least 1 cm thick.
Now we will proceed to fry them in plenty of oil. If you want to give a touch of more flavor to these Carnival Ears, you can add an orange or lemon peel to the oil, depending on which one you like the most. In addition, when you put them in the pan, bend one of the ends, so that it is similar to the pig's ears.
