Campurrianas cookies, to dip in the coffee

Campurriana cookies

All the campurrianas cookies they have always been part of the traditional six o'clock coffee at my house. When I was little I enjoyed watching these cookies drank my glass of milk and today I enjoy baking them. They are not exactly the same, but the satisfaction of doing them yourself makes them earn integers.

The recipe is very simple and we do not need the help of any kitchen robot to obtain a good result; a fork and our own hands they are enough to achieve a homogeneous mixture to take to the oven. I assure you that they are butter cookies delicious; once you try them you will not want to buy them again.

Ingredients

  • 1 egg
  • 125 g. of butter
  • 125 g. of sugar
  • 50 g. ground almond
  • 200 g. of pastry flour
  • 4 g. yeast

Crafting

In a bowl, we mix the butter with the sugar with the help of a fork or some rods. Next we add the beaten egg and mix.

We incorporate the sifted flour, the yeast and the ground almond and mix well until all the ingredients are integrated and a homogeneous dough is achieved.

We line a baking tray with greaseproof paper. With my hands greased with oil we form balls and we place them on the oven tray, squashing them slightly with the fork. We must place them separately so that they do not stick when growing in the oven.

We introduce in the oven preheated to 200º for about 10-12 min, or until golden brown.

When you take them out of the oven, Let it cold down the cookies on the same tray, for 5 minutes, and then we pass them to a rack to finish cooling.

We keep in a can in a cool place.

Notes

If you do them in the evening-night the next morning they will be at their best. They are cookies that win with a few hours of rest.
