Buttery bean mayonnaise

Try this recipe as it is ideal for a starter of canapés or toasted buns.

Ingredients

250 grams of buttery beans
2 cloves of garlic
3 tablespoons of fresh parsley, finely chopped
1/3 glass of lemon juice
Salt to taste

Procedure

Put the beans in water overnight so that they swell and soften. The next day drain them and cook them with salt.

Put the beans in a blender with a little cooking water, garlic, parsley and lemon juice until a consistency is similar to mayonnaise.
