- To prepare this delicious dish of broken eggs with potatoes and ham, we will start by peeling the potatoes.
- We wash and cut the potatoes into 1 cm strips.
- We put a frying pan over medium high heat with plenty of olive oil, when it is very hot we introduce the potatoes, we lower the heat a little and we let them cook for about 10-12 minutes; They should be golden and crispy on the outside and soft on the inside.
- When the potatoes are ready, we take them out and drain them well, placing a sheet of kitchen paper on a plate. We put the potatoes so that they release the excess oil. We transfer them to a source. We add a little salt.
- We cut the ham into strips or pieces and we put it for the potatoes, they mix everything
- In the same oil to fry the potatoes, we fry the eggs, one by one.
- We are putting them on top of the potatoes.
- With the help of two knives, we break the eggs on top of the potatoes and the ham. We serve immediately hot.
