This recipe for broccoli with mushrooms and boiled egg has saved me numerous meals. Making it is very simple and takes very little time, especially when you have part of the ingredients previously cooked and therefore ready to be used in any preparation.
In this case, it was enough for me to remove the blanched broccoli and the cooked eggs from the fridge to sauté them together with the mushrooms, the only item that I had to cook at the moment. And how long does it take to sauté some mushrooms? Time is minimal and in return you get a healthy plate and perfect for an impromptu lunch or dinner.
- 1 head of broccoli in florets, blanched
- 2 boiled eggs
- 1 garlic clove, minced
- 1 cayenne pepper
- 300 g. mushrooms, cleaned and chopped
- 1 handful of nuts (cashews, almonds ...)
- 2 teaspoons soy sauce
- Black pepper
- Extra virgin olive oil
- In a frying pan sauté the garlic and the chilli for a few seconds with a little olive oil
- Then add the mushrooms and sauté until golden.
- Then, add the broccoli and soy sauce. Mix and sauté for a couple of minutes.
- We add the egg cooked, mix and pepper.
- To finish, and before serving the broccoli with mushrooms, we add the nuts.
