But in addition, this vegetable omelette is prepared in a few minutes and does not require great culinary skills. So it is perfect for people with little time, students or for all those who arrive at night without wanting anything.

Ingredients
  • Carrots 2
  • 1 broccoli
  • 4 eggs size L
  • Extra virgin olive oil
  • Sal Island

Preparation
  1. First we are going to peel the carrots, wash well and reserve.
  2. Next, we remove the sprigs of the broccoli and we pass through the jet of cold water.
  3. We put a saucepan on the fire with water and once it is a little hot, we introduce the carrots.
  4. Let it cook for about 15 minutes and after that time, we also add the broccoli florets.
  5. Cook for about 7 or 8 more minutes and drain.
  6. Soak the vegetables in cold water to stop cooking.
  7. Now, we are going to cut the carrot into thin slices.
  8. We remove the stems of the broccoli and chop.
  9. In a bowl, beat the eggs and add a pinch of salt.
  10. Mix the vegetables with the eggs and salt to taste.
  11. Finally, we prepare a non-stick frying pan with a little virgin olive oil.
  12. We prepare the tortilla until it is well curdled and ready.
