- To prepare the battered squid First of all we will clean the squid, although they are cleaned at the fish market, we will finish cleaning them inside so that nothing is left, it is very annoying to find lint. We dry them well with kitchen paper. We add a little salt and leave them in the fridge until it's time to make them.
- We will have the bowl in the fridge for a while with the flour that is very cold, we take it out and add the salt and the baking soda. We will have the beer very cold, if possible, we will put it before using it for about 10-15 minutes in the freezer.
- Take the beer out of the freezer, add a little and mix.
- We continue adding more beer, until we have a dough like a bechamel, neither too heavy nor too light, tending to thick.
- We put a high frying pan with plenty of olive oil, it must be very hot but not smoke, the maximum temperature must be 180º.
- We add the squid rings to the dough in batches.
- We passed them well through the dough and drained.
- We are throwing 3-4 pieces into the pan in small batches so that the temperature of the oil does not drop. We fry on one side and when we see they are a little golden we turn them over and let them finish browning.
