Ingredients
  • 450 grams of round rice
  • 250 grams of frozen prawns
  • 3 fresh squid
  • 4 bags of squid ink
  • 1 cebolla
  • 2 cloves of garlic
  • 1 glass of white wine
  • 2 liters of water
  • Extra virgin olive oil
  • Sal Island

Preparation
  1. The first thing we will do is completely clean the fresh squid, reserving its natural ink. Once clean, we will cut them into small cubes with the help of kitchen scissors.
  2. In a saucepan with a little olive oil, we will put it to heat and add the squid cubes that we have cleaned before. Once sautéed we will add the onion well cut into thin slices, the garlic cloves into small pieces and the frozen prawns.
  3. While this is simmering, in the glass of white wine We will dissolve the envelopes with ink plus the natural one extracted from the fresh squid.
  4. Once the onion is poached and the squid is half done, we will add the glass of wine along with the ink and leave it over medium heat for a few 10 minutes.
  5. Next, we will add the round rice and we will lower the heat a little. Let it cook for 5 minutes and then add the water, about two liters.
