Black rice with cuttlefish, a traditional dish of our gastronomy, which is made with the same cuttlefish ink or we can buy squid ink or cuttlefish that they sell in bags.

There are many ways to make rice, in each house they prepare it in their own way, in every way this rice duck is a delight, full of flavor.

The ideal for this dish is that the ingredients are of good quality, especially the cuttlefish or squid, since they give all the flavor to the dish. To finish the dish, it is usually accompanied by aioli.

Ingredients
  • 2 cuttlefish with their ink
  • 350 gr. of rice
  • 1 green pepper
  • 2 cloves of garlic
  • 150 gr. crushed tomato
  • 1 liter of fish broth or water

Preparation
  1. To prepare the black rice with cuttlefish, we will start with the cuttlefish, we can ask the fishmonger to clean it and keep the ink bag for us.
  2. Cut the cuttlefish and legs into pieces.
  3. Chop the garlic and green pepper.
  4. In a paella we put a little oil, add the cuttlefish, and sauté it. We leave it on one side of the paella.
  5. Add the chopped pieces of green pepper, let it cook for a few minutes and add the chopped garlic.
  6. Before the garlic is browned, add the crushed tomato, let it cook over medium heat for 5 minutes, all together.
  7. We put the ink in a mortar with a few spoons of water, we stir it well and dissolve it with the water, we add it to the sauce.
  8. Add the rice, stir and cook with everything for a few minutes. Followed by adding the fish broth or hot water.
  9. We let the rice cook for 15-18 minutes or until it is to your liking, we taste the salt a little before and add if necessary.
  10. When it is turned off, let it rest for a few minutes and serve.
