Quick and refreshingThis is the beet and citrus salad that I propose to you today. A salad that draws attention for its color but that after the first bite conquers you with its intense flavor. Do you dare to try it? It will not take you more than 10 minutes to prepare it.
Use oranges of different kinds It makes the salad more attractive, but it is not a condition for preparing this salad. The salad also has avocado, nuts and a honey, mustard and citrus vinaigrette that add an extra color and flavor. If you are looking for a light proposal to start the meal, keep it in mind!
- 1-2 cooked beets
- 1 orange
- 1 blood orange
- 1 Avocado
- 1 handful of roasted hazelnuts
- 1 chive
- 4 tablespoons of extra virgin olive oil
- 1 tablespoon of lemon juice
- 1 tablespoon lime juice
- 1 teaspoon of honey
- ½ teaspoon mustard
- Lemon zest
- Salt and pepper to taste
- In a bowl, mix the oil, lemon juice, lime juice, lemon zest, honey, mustard and a little salt and pepper, to prepare the vinaigrette. Reserve.
- We cut both the beets and the sliced citrus using either a mandolin or a fine knife. We place in a source or two plates.
- Next, we open, peel and we chop the avocado and we add it to the salad.
- Add the hazelnuts and the chives in julienne.
- Finally, we beat the vinaigrette and we water the salad with it.
