Ingredients
  • 1-2 cooked beets
  • 1 orange
  • 1 blood orange
  • 1 Avocado
  • 1 handful of roasted hazelnuts
  • 1 chive
For the vinaigrette
  • 4 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • 1 tablespoon lime juice
  • 1 teaspoon of honey
  • ½ teaspoon mustard
  • Lemon zest
  • Salt and pepper to taste

Preparation
  1. In a bowl, mix the oil, lemon juice, lime juice, lemon zest, honey, mustard and a little salt and pepper, to prepare the vinaigrette. Reserve.
  2. We cut both the beets and the sliced ​​citrus using either a mandolin or a fine knife. We place in a source or two plates.
  3. Next, we open, peel and we chop the avocado and we add it to the salad.
  4. Add the hazelnuts and the chives in julienne.
