Beef stew with artichokes

Beef stew with artichokes, a classic in our kitchens, a spoon dish that cannot be missed, especially on cold days.

Its preparation is a bit long since it is cooked over low heat and without haste, but sometimes that is our problem, the lack of time. When I have little time I prepare it with the quick pot to shorten time, but not the entire plate, only the meat, since it needs more time as it is veal. Then to cook the meat with the potatoes I do it over low heat and that way the best sauce and a delicious stew are left. But you can continue the process by pouring the potatoes into the pot, close it and in a few minutes the plate will be ready.

I also mention that I usually leave the meat the day before prepared and the next day I only have to cook the meat with the potatoes.
A rich and simple recipe, a spoon dish that is already beginning to appeal.

Ingredients
  • 1 kilo of beef to cook
  • 1 cebolla
  • 6 tablespoons of tomato puree
  • 125 ml. white wine
  • 3-4 potatoes
  • 4 artichokes
  • 1 tablespoon flour
  • Oil, salt and pepper

Preparation
  1. We will chop the meat or we already buy it chopped, we clean it of fat and webs.
  2. We put salt and pepper to the meat and we pass it through flour.
  3. We will put the pot on the fire with a good jet of oil and on high heat we will brown the meat.
  4. Once browned we will put the onion cut into pieces and the crushed tomato.
  5. We stir everything, leave it for a couple of minutes, add the white wine and let it reduce for a few more minutes.
  6. Now we put a glass of water to cover the meat and close the pot, let it cook for 15 minutes.
  7. While the meat is being cooked, we are cutting the potatoes and cleaning the artichokes.
  8. Once the meat is there, we open the pot, at this point the meat is left with a very good sauce and with some fried potatoes it is a great dish.
  9. We can continue with the stew in the same pot or in another casserole, put the meat with the sauce and cover with a good glass of water.
  10. When it starts to boil we will add the potatoes and artichokes, we will leave it over medium heat until the potatoes are cooked.
  11. When we see that they are tested for salt, we rectify and they will be ready.
