Today I bring you this personal version of Mexican enchiladasThis recipe is suitable for the whole family since it is not very spicy in itself, but you can also adapt it to your liking.

- First we prepare the meat, we put a frying pan on the fire with a drizzle of olive oil.
- Add the minced meat and fry.
- We add the spices to taste and salt.
- Cut the ripe tomatoes into small cubes and add to the meat.
- We add to the pan and stir a little.
- We add half a glass of water to make a little sauce.
- We preheat the oven to 180 degrees.
- In a suitable ovenproof dish, we are placing the corn tortillas.
- On a tortilla we put a part of the meat and join the sides, with another tortilla we close it at the top as if it were a sheet.
- We put the cheddar cheese on the enchiladas.
- Put in the oven until the cheese is melted and golden, about 8 or 10 minutes.
- Preparation of the guacamole
- We remove the pulp from the avocado with the help of a spoon.
- We place in a bowl and crush the avocado with a fork, it must be well ripe.
- Cut the tomato and onion into very small pieces.
- Add to the avocado and season with salt, a little oil and lime or lemon juice to taste.
