Ingredients
  • 500 gr. white beans
  • 1 cebolla
  • 1 piece of green pepper
  • 2 whole garlic cloves
  • 4 tablespoons of tomato sauce
  • 1 hoja de laurel
  • 1 tablespoon paprika
  • 2-3 potatoes
  • Olive oil
  • Sal Island

Preparation
  1. To prepare the bean stew with potatoes, we will first soak the beans overnight for 8 to 12 hours.
  2. When we go to prepare them we put a casserole with 2 tablespoons of olive oil, add the whole onion or halved, the half pepper, the bay leaf, the garlic cloves and the fried tomato, we remove everything when the oil is hot and the fried tomato we add the tablespoon of sweet paprika, stir that it does not burn and add water to cover half a pot or more.
  3. We add the beans, we leave them until they start to boil, then we add a little cold water and cut the boil, we will do it a couple of times.
  4. Let cook for 50 minutes.
  5. While we cut the potatoes, we leave them whole in water until the beans are past their time.
  6. After this time, the beans will be almost cooked, add the potatoes, cut them, breaking them at the end or clicking them and add them to the casserole. If water is needed, it is added.
  7. Add a little salt, we will try and leave until everything is cooked.
  8. We will serve this dish very hot.
