This salad is worth a starter or if you want it as a single dish you just have to accompany it with some protein such as a hard-boiled egg or a can of tuna ...
The basis of this salad is beans or white beans, a legume that is widely consumed in spoon dishes. The preparation of this salad is very fast, since you can buy the beans already cooked.
You can change the ingredients just like the vinaigrette, which I have prepared is the basic one.
- 1 large jar of white beans (400 g already drained)
- Cherrys tomatoes
- ½ large green bell pepper
- 1 chive
- ½ can of black olives (80 g)
- ½ red pepper
- 70 ml extra virgin olive oil
- 50 ml apple cider vinegar
- 1 teaspoon of salt
- We will remove the beans from the jar, put them in a colander and wash them well under the tap.
- We wash and chop the ingredients into very small pieces, the green pepper, the red pepper, the spring onion.
- We wash the cherry tomatoes and cut them in half or into small pieces.
- We take a bowl we put the cooked beans, we add all the chopped ingredients, the whole or chopped olives and some tomatoes.
- We prepare the vinaigrette, in a bowl we put the oil, vinegar and salt we beat it with a fork until it is a little bound, we add part to the salad and stir everything well.
- We transfer the beans to a platter and garnish with the rest of the cherry tomatoes and some olives. We serve the rest of the vinaigrette separately.
