Bean and cod salad

bean and cod salad, also called Empedrat as it is called in Catalonia. A salad that is consumed a lot in summer, a fresh and very complete salad.

A very healthy salad for its ingredients, raw vegetables, good proteins and legumes, seasoned with a good olive oil.

Although the ingredients it contains are very common, we can combine the salad with other vegetables or proteins, supports everything you want to put. I love it and in summer I consume it quite a bit.

It is also a salad that we can prepare in advance, we will leave it in the fridge without dressing until serving time. It is also ideal to take to work in the lunch box, but it is better to dress it at the time of consumption.

Ingredients
  • 1 pot of cooked beans
  • 2 pieces of desalted cod
  • 1 red pepper
  • 1 green pepper
  • 1 spring onion
  • 2 tomates
  • 4 hard-boiled eggs
  • Olive oil
  • Vinegar (optional)

Preparation
  1. We will buy the cod already soaked, otherwise we will soak it for 48 hours, changing the water every 6 hours. We will put the eggs to cook.
  2. On the other hand, we will prepare the beans, if we buy them from the pot already cooked, we will wash them well under the tap and drain them well.
  3. We put the beans in a serving platter.
  4. Chop the green pepper, the red pepper, the tomato, the cod into strips and the spring onion into small pieces.
  5. We will put everything in the source with the beans and mix it.
  6. We dress the salad with oil and vinegar or just a drizzle of oil, we garnish the salad with boiled eggs and some olives.
  7. And it will be ready to eat !!! We can serve in individual plates.
