Ingredients
  • 250 g. all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon powder
  • 3 ripe bananas
  • 150 g. plain yogurt at room temperature
  • 1 teaspoon vanilla essence
  • 200 g. creamy butter
  • 225 g. brown sugar
  • 2 eggs at room temperature

Preparation
  1. We heat the oven at 180 ° C and line a loaf pan with greaseproof paper.
  2. We sift the flour, the bicarbonate of soda and the cinnamon in a large bowl and set aside.
  3. We mash the bananas with a fork in another bowl and mix them with the yogurt and vanilla.
  4. In a third container we beat the butter and sugar until white. Then we add the eggs, one by one, beating well after each addition.
  5. With a spoon add a third of the reserved flour mixture and we mix gently, with enveloping movements. Next we add half of the banana mixture and mix. We repeat the process until all the ingredients are integrated.
  6. We pour the dough in the mold and level the surface with the back of the spoon.
  7. Bake 70 minutes or until it comes out clean when punctured in the center with a skewer stick.
  8. We remove from the oven, let the cake warm for 10 minutes and then, unmold on a rack so that it finishes cooling down.
