I don't know about you, but I like to vary a lot from breakfast. A few years ago I always had the same breakfast, but now I try to make each day different or at least have a different presentation. These banana and oatmeal pancakes they are one of my usual breakfasts during the weekend, do you want to try them?

Ingredients
  • 30 g. oatmeal
  • 1 ripe banana
  • ½ teaspoon cinnamon
  • ½ teaspoon of vanilla essence
  • Almond vegetable drink
  • 1 teaspoon of EVOO
  • ½ banana and 1 ounce of 90% dark chocolate to accompany

Preparation
  1. In a bowl we mix the oatmeal, the mashed banana, the cinnamon and the vanilla essence.
  2. We add milk little by little while beating, until achieving a consistency similar to that of a puree.
  3. Let stand a couple of minutes while we prepare the pan smearing the base with extra virgin olive oil.
  4. We pour a saucepan of the dough and cook over medium heat until the base is lightly browned. Then we turn over with a spatula and cook on the other side.
  5. As we make them we take them out and we pile on a plate that we will cover so that they do not lose heat.
  6. We serve with fresh fruit and chocolate.
