Banana and chocolate chip muffins

If you like desserts with bananas you cannot stop trying these banana muffins and chocolate chips. A sweet proposal to have for breakfast or a snack that will especially appeal to the little ones in the house. The 16-18 muffins that come out of this recipe will soon disappear.

This recipe is also interesting because it allows us to take advantage of those very ripe bananas that nobody eats anymore and they stay in the fruit bowl. These will be in charge of giving them an intense flavor, however other ingredients will also be important in their preparation. The recipe that wouldn't have the same appeal if it weren't for the creaminess of Greek yogurt and the fun touch of chocolate chips. Give them a try!

Ingredients

  • 2 XL eggs
  • 225 g. of sugar
  • 60 ml. mild olive oil
  • 1 Greek yogurt
  • 2 teaspoons of vanilla essence
  • 2 large ripe bananas, mashed
  • 120 g. of dark chocolate chips.
  • 300 g. flour for pastry
  • 1 tablespoon of baking powder

Crafting

We preheat the oven to 180 degrees and we prepare the molds, placing the paper ones inside the steel ones.

In a bowl we beat the eggs with the sugar until white and fluffy.

We add the oil little by little from the edge of the bowl while we continue beating.

Next we add the Greek yogurt and vanilla and we beat until integrating.

Little by little we add the Banana's mashed and the chocolate chips and mix gently until integrated.

Finally, we sift the flour with the baking powder and add it to the previous mixture. With a spoon we integrate it through enveloping movements.

We pour the mass obtained into the paper molds to cover 3/4 thereof.

We bake at 180º, approximately 20-30 minutes, until lightly browned and when pricked with a toothpick it comes out clean.
