Preparation
  1. To prepare the baked spinach and cheese omelette, we will start by cleaning the spinach, you can buy the ones that are sold in bags, the amount to your liking, since when cooked they remain less than half.
  2. We put the oven at 200º C, it warms up.
  3. Chop the onion small, put a pan with a little oil and brown the onion.
  4. Once the spinach is clean, add it to the onion, add a little salt and fry everything together. The amount will be to the taste of each one and according to how big the tortilla is. The best thing is to add spinach and depending on the volume add more-
  5. In a bowl put the eggs and a little salt.
  6. Beat the eggs with the egg whites and the cream, once it is well mixed, add the fried onion and spinach, mix.
  7. In a frying pan that can go in the oven, put a little oil, put it on the heat and add the tortilla mixture, leave a few minutes to make the base of the tortilla. when we see that it is curdling around it, we add the goat cheese and a little grated cheese.
  8. Put the pan in the oven and cook for about 12-15 minutes or until the surface of the tortilla is golden.
  9. Remove from the oven and serve immediately.
