Today we prepare a recipe that requires little work on our part: Baked salmon with baked potatoes and peppers. It is a fantastic recipe that, accompanied by a cup of rice, becomes a fantastic alternative to complete our menu any day of the week.
Most of the work will be done by the oven, however previously we will have to take care of cook the baked potatoes a few minutes. And it is that the time it takes to cook the salmon is not enough for them to be sufficiently cooked.
Bell peppers are a wonderful addition to this dish. I personally like to add roasted peppers in strips but you can choose the type of preserve that you like the most or even bet on a raw red pepper. Cut it into slices, cook it with the potatoes and it will be ready to go in the oven with the rest. Try it!
The recipe
- 2 slices of salmon
- 2 medium potatoes
- 1 small jar of roasted peppers in strips
- 2 cloves of garlic
- Parsley
- A splash of lemon juice
- Olive oil
- Sal Island
- Peel and cut the potatoes sliced not very thick. Put abundant oil in a frying pan and cook them over medium/high heat until they are soft.
- while they cook mince the two cloves of garlic and mix them with the parsley, the juice of a lemon, a pinch of salt and a splash of olive oil. We booked.
- When the potatoes are soft, place them well drained in the bottom of a baking dish. And on them, we distribute the peppers in strips.
- Over, place the salmon loins that we water with the dressing that we have prepared
- We put in the preheated oven at 180º, and cook 10-15 minutes.
