Ingredients
  • 1 pollo
  • 3-4 green peppers
  • 2 onions

  • 1 eggplant
  • Potatoes
  • 1 tablespoon paprika

  • 1-2 tablespoons oregano
  • 1 glass of white wine

Preparation
  1. To make the baked chicken with vegetables, we will start by cleaning the chicken, cut it in the center and put it flat in a baking dish.
  2. In a bowl we prepare a mash. We put the sweet paprika, the tablespoons of oregano and the glass of white wine we mix it well.
  3. With this mash we cover all the chicken, we will see that all the chicken is well spread, we put black pepper and a little salt. We left it for a couple of hours.
  4. While preparing the vegetables, we peel the potatoes and cut in half, wash the peppers, wash the carrots, cut them into pieces, wash the eggplant and cut it into 3-4 cm slices.
  5. We put the oven at 180ºC, in the tray we put the potatoes, the vegetables. We drizzle a little oil and put it in the oven.
  6. We will leave it for 60 minutes, it will vary depending on the oven and how big it is. We will turn it around so that it stays golden all over. If the tray is getting dry we can add a glass of water, so the chicken does not stay dry.
  7. When it is ready we will have it ready to eat !!!
