I have to admit that I love avocado in salads. When I saw them this week at my greengrocer, I couldn't resist picking up a couple of them. Then I had to think about what to combine it with, lettuce, spinach or cabbage? I finally decided on one coleslaw, avocado and pomegranate.
Pomegranate seeds add a lot of color to green salads, they make them much more fun, don't you agree? These are the most striking ingredients of this salad but there are more and all of them are washed down with a vinaigrette to which I have incorporated a pinch of honey. Light and healthy, will you try it?
- ½ chives, chopped
- 3 tablespoons olive oil
- 2 tablespoons of water
- 2 tablespoons honey
- ½ tablespoon apple cider vinegar
- A pinch of salt
- A few drops of lemon juice
- 2 cups kale, chopped
- Pomegranate seeds
- ½ diced avocado
- 1 handful of cashew nuts, chopped
- Sal Island
- Freshly ground pepper
- We mix in a bowl the ingredients for the vinaigrette. We reserve them.
- We put the cabbage curly in a platter or various dishes, depending on how we want to serve it.
- Then we incorporate the seeds pomegranate, diced avocado and chopped cashew nuts.
- We pour the vinaigrette on top and we stir well so that the cabbage is impregnated with all the flavors.
- We season if we think it is necessary.
