Eggplants Stuffed Vegetables, a great recipe with assorted vegetables. Stuffed aubergines can be prepared in many ways, stuffed with chicken, beef, mushrooms and any filling that you like. Eggplant has few calories, they are very healthy, many of its benefits are in its skin, so it is good to cook it and eat it with the skin. It is also a good accompaniment or as a garnish to any dish.

To accompany this dish I have put the aubergines covered in bechamel, they are very juicy and very good, but if they you want lighter they can be covered only with grated cheese and au gratin.

Ingredients
  • 4 eggplants
  • 2 onions
  • 1 green pepper
  • 2 zucchini
  • Crushed tomato
  • Fried tomato 2-3 tablespoons
  • ½ glass of white wine
  • Oil, salt and pepper
  • Bechamel sauce or grated cheese

Preparation
  1. We will start by washing the aubergines, cut them in half, give a few cuts and a splash of oil, and put them in the microwave or oven until they are tender.
  2. In a frying pan we will poach the onions and green pepper, with a little oil.
  3. When it begins to take color, we will add the small cut zucchini.
  4. We will leave it until it is done, we will remove the aubergines and remove the pulp, we will chop it and add it to the other vegetables.
  5. When everything is mixed, we will add the crushed tomato and the fried one, the amount will be to suit each one, if you like it with more or less tomato.
  6. We let it cook a little and add the white wine, the salt and the pepper. Add the can of sliced ​​mushrooms.
  7. We let everything cook for a few minutes and that's it. We stuff the aubergines.
  8. We cover with bechamel sauce or grated cheese, we put it in the oven until it is golden.
  9. And ready to eat!!
