Eggplant ham and cheese lasagna, a cake with vegetables and a rich ham and cheese filling. A very complete dish for the whole family. A simple dish that instead of putting the pasta we put the eggplant, a healthy dish and a way to introduce this vegetable. The whole family will surely like it.

It is very good, It is very juicy and with a rich cheese flavor. It is an ideal summer dish, you no longer feel like so much spoon dish, these recipes go very well. It can be left prepared the day before, I'm ready to grill and that's it.

Ingredients
  • 2 eggplants
  • 300 gr. sliced ​​cheese
  • 300 gr. york ham
  • 200 ml. cream for cooking
  • 1 egg
  • grated cheese
  • salt and pepper

Preparation
  1. We clean and cut the aubergines. We salt them and leave for half an hour in a plate or a strainer to release the water.
  2. After this time we dry them and we brown them in a frying pan with very little oil, so that they are grilled.
  3. We are putting them on a plate until they are all done.
  4. We prepare a baking dish where we will put the first layer of eggplant.
  5. On top we put the slices of ham. On top of these we put the cheese slices.
  6. Another one of eggplant, ham, cheese and so 2-3 layers, we will finish covering the lasagna with a layer of eggplant.
  7. In a bowl we will beat the egg, the cream, salt and pepper.
  8. We cover the entire aubergine lasagna with this cream.
  9. We put a layer of grated cheese.
  10. We will introduce the lasagna in the oven at 180ºC heat up and down, until it is golden.
  11. We take out and serve hot.
  12. To eat!!!
