Assorted potato salad

La potato is sometimes considered too fattening, but this way of cooking (roasted) is not supported in this myth. Also, combining it with cooked rice and tomato makes it a great fresh and filling salad for any lunch or dinner.
Ingredients
- 4 medium potatoes.
- 10 fish sticks.
- 100 g of rice.
- 2 garlic cloves.
- 2-3 small tomatoes.
- Olive oil.
- Vinegar.
- Water.
- Salt
Preparation
First, we will put the potatoes to cook along with the water and a pinch of salt. The approximate time is 20 to 25 minutes, but we will check if they are tender by pricking them with a toothpick.
At the same time that the potatoes are made, we will do the rice. In a small casserole, we will put the sliced garlic cloves and when they are browned we will add the rice, we will sauté a little and we will add double the water. We will cook about 20 minutes.
On the other hand, we will defrost the crab sticks and we will cut them into medium dice. In addition, we will also wash and dice the tomatoes.
Finally, in a wide bowl We will add the tomatoes and the cut crab sticks along with the rice. We will cut the cooked potatoes into medium dice and stir well. Let it cool for a few hours and serve by dressing it with oil, vinegar and salt or with a light mayonnaise sauce.
