- To make the asparagus omelette, we will start by preparing the ingredients. We wash the asparagus well under the tap. We cut the hardest part of the asparagus.
- We chop the asparagus, cut the part of the tips and the rest we cut into pieces.
- We put a frying pan over medium heat with a good jet of oil and put the asparagus minus the tips. We let it cook for 10 minutes.
- Now we put the tips of the asparagus in the pan, since they cook in less time. We leave it for 15-20 minutes. We put a little salt. We will add oil as needed.
- When they are, we set aside and reserve.
- On the other hand, in a bowl we put the eggs and the whites, we beat it well, we put a little salt and pepper.
- Add the asparagus and mix well.
