Arugula, cheese and raisin salad

This week we have enjoyed summer temperatures; a truce that has made me rescue some recipes that I could not propose to you during the months of July and August like this green salad, simple, fast and very tasty.

This arugula salad is only served with raisins and cheese; a preferably natural cheese that melts quickly when fried in the pan. Cheese adds flavor and tempers a dish that is completed with raisins, I am faithful to this ingredient in almost all my salads! You can also try throwing them in a Smoked Salmon Salad.

Ingredients

For two people

  • A prepared bag of arugula
  • 1/4 onion
  • A handful of raisins
  • 8 cheese tacos
  • Flour (XNUMXg)
  • 1 beaten egg
  • Olive oil
  • Balsamic vinegar
  • Sal Island
  • 1 teaspoon honey (optional)

Battered cheese

Crafting

In a fountain place the arugula as background. Add the julienned onion and raisins.

Pass the cheese cubes first by flour and then by egg. Fry them in a pan with very hot oil until they are soft - do not let them melt-

Now, prepare the vinaigrette using olive oil, Modena vinegar, salt and a little honey. Pour it on top of the salad and stir it.
