Arugula, Chicken and Wheat Grain Salad

Lately I have been experimenting with products until now unknown to me, especially cereals and seeds. I recently prepared this arugula and chicken salad with wheat grains. You can find the latter in organic product stores and some large supermarkets.

The wheat grains they look like other whole grains, like barley. They are highly nutritious, highlighting a high content of proteins, minerals such as phosphorus and calcium, B vitamins, including B12 and trace elements. Do you dare to try it?

This salad of arugula, chicken and wheat grains is very fresh, ideal for the next days of summer. You can keep it in the fridge and dress it before serving.

Ingredients
  • ½ cup of wheat grains
  • 1 and ½ cups of chicken broth
  • 1 tablespoon olive oil
  • ½ white onion in julienne
  • Sal Island
  • 200 g. shredded chicken breast
  • 2 cups arugula
  • Chopped cilantro
  • Some mint leaves
  • 1 scallion in julienne
  • 2 jalapeños, seeded (optional)
  • Black pepper
For the dressing
  • ½ lemon juice
  • 2 tablespoon of virgin olive oil
  • 1 teaspoon of oil is dislodged

Preparation
  1. In a casserole we place the grains wheat, chicken broth and a pinch of salt. We cook over low heat-medium about 40 minutes until the beans are tender. Once tender, we leave them in a colander while they cool.
  2. Meanwhile, in a medium frying pan, heat a tablespoon of olive oil. When it is hot, we add the julienned onion and a pinch of salt. Poach for 10 minutes until lightly golden. We booked.
  3. In a bowl we put the dressing ingredients, mix well and bathe the shredded chicken in it. Add the onion and wheat grains and mix well.
  4. We add the arugula, the coriander, lamenta, the chives, the jalapeños in strips, a pinch of freshly ground pepper and we mix again.
  5. We test and correct the salt. We can also add more lemon juice if necessary.
  6. We serve at room temperature or cold.
