Artichokes in sauce with ham

Ingredients
  • 6-8 artichokes
  • 1 cebolla
  • 100 gr. diced ham
  • 100 ml. white wine
  • 2 spoonful of fried tomato
  • 1 tablespoon flour
  • 1 pinch of salt
  • 1 lemon
  • 1 pinch of pepper
  • A spurt of oil

Preparation
  1. To prepare the artichokes in sauce with ham we will start by cleaning the artichokes.
  2. We remove the hard leaves until we reach wings that are whiter and more tender. We can leave the trunk. We put a pan with water and a splash of lemon juice on the fire, when the artichokes are clean we can cut them in half or in quarters, we put them in the pan to cook for 15 minutes.
  3. While the artichokes are cooking, prepare the sauce. Peel and slice the onion finely. Put a frying pan with a little oil, add the onion and fry over medium heat.
  4. When the onion has a little color, add the ham. We fry it all together. On one side we will add the flour and stir so that the flour cooks a little.
  5. Add the two tablespoons of fried tomato, stir to mix the ingredients. Add the white wine and let it reduce the alcohol.
  6. When the artichokes are cooked, we take them out and drain, we will not throw away the water. Take a glass of the water from cooking the artichokes and add it to the pan along with the sauce and the ham. Put the artichokes in the pan and add a little pepper. We try salt since the ham is salty, if necessary we add a little. Let it cook for 5 minutes and that's it.
