Apple, cinnamon and raisin cake

You know what I like to cook cakes on the weekend. It has been to arrive the bad weather and to recover the old customs. I have done it with this apple cake, cinnamon and raisins. An ideal combination of flavors to start the day, don't you think?

The cake is simple to prepare, although it requires previously elaborating a simple Apple puree. A kind of compote but without sugar; We will add it to the cake later. Do not hesitate to try it and tell me the result.

Ingredients
  • 1½ cup whole wheat flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup of unsweetened applesauce *
  • ⅓ honey cup
  • ⅓ cup of melted butter
  • 1 teaspoon vanilla essence
  • 2 handfuls of raisins
For the applesauce:
  • 8 apples
  • 2 nails
  • 1 cinnamon stick (if you like cinnamon a lot)
  • 1 tablespoon of lemon juice
  • ½-2/3 cup of water

Preparation
  1. We prepare the puree of Apple. To do this, we peel and chop the apples. We place the apple pieces in a saucepan with the rest of the ingredients. Bring to a boil and cook over low-medium heat for 20 min. approximately. When the apple pieces are soft, mash the mixture.
  2. We preheat the oven at 180ºC and grease a rectangular loaf pan.
  3. We mix the Dry ingredients: flour, cinnamon, baking soda, baking powder and salt.
  4. We make a hole in the center and we incorporate the eggs, apple puree, honey, butter and vanilla essence. We mix the wet ingredients and little by little we integrate the dry ones into the mix.
  5. We add the raisins and mix lightly.
  6. We pour the mixture into the mold and we equalize the surface.
  7. Bake for 40-50 minutes or until toothpick inserted in center comes out clean.
  8. We take out of the oven the mold and let it temper for 10 minutes.
  9. Then unmold on a rack and let it cool completely.

      1 cup is a measure used in many countries. It is approximately equivalent to a 240 ml cup. I have a measuring glass with two units: cups and ml of that I use to make these recipes.
