The sponge cake is one of the most versatile sweets, as it supports hundreds of varieties in terms of ingredients. You can include any fruit you have at home, those that are already more mature and usually end up in the trash, in a cake they will be perfect. Today I bring you a variety of the traditional sponge cake, in this case with a delicious touch of apple and with the advantage that it does not contain oil or any type of fat, so it is somewhat lighter.

This apple cake is so simple and quick to prepare, which is perfect for any occasion, be it for a family snack or to offer a sweet to an unexpected visit. Once you try it, you will surely do it very often. In addition, you can include other ingredients to give it your special touch such as ground cinnamon, pieces of walnuts or pieces of apple inside. Without further ado we get down to the kitchen!

Ingredients
  • 250 gr of pastry flour
  • 1 teaspoon yeast
  • 3 golden apples
  • 4 eggs L
  • 200 gr of white sugar
  • 1 lemon

Preparation
  1. First we are going to preheat the oven to about 180 degrees while we prepare the cake batter.
  2. We will need a low mold and a sheet of greaseproof paper so that it does not stick.
  3. So that the sheet is well fixed, we wet it with a little water and accommodate it on the mold.
  4. In a large bowl, we put the 4 eggs and the sugar and beat with some rods.
  5. Now, we mix the flour with the yeast and sift it over the previous mixture.
  6. We beat again so that all the ingredients are well integrated.
  7. Next, we wash the apples well and peel them.
  8. We take 2 apples and chop them, put them in the blender glass and add the lemon juice.
  9. Blend very well until obtaining a smooth puree.
  10. Add the applesauce to the cake mix and mix well.
  11. We put the dough in the mold, making sure it spreads well.
  12. To finish, cut the remaining apple into thin slices and place on the cake dough with the desired shape.
  13. We bake for about 30 or 40 minutes, making sure it does not burn.

Notes
Prick the cake with a toothpick to check that it is well done in the center, if the toothpick comes out clean it is ready.
