Apple cinnamon muffins

During the weekend, at home, we like to treat ourselves sweetly. We always bake some sponge cake or some muffins to enjoy for breakfast or as a snack. These apple cinnamon muffins they became our sweet treat weeks ago.

Any dessert that combines apple and cinnamon is attractive to me. It is a combination that I love and any recipe that includes it in its ingredients almost automatically goes to my list of pending recipes. If it also catches your attention, I encourage you to try it. It won't take you long do it!

Ingredients
  • 220 g. Of flour
  • 1 teaspoon of cinnamon powder
  • 1½ teaspoons of baking soda
  • ½ teaspoon of nutmeg
  • ¼ teaspoon salt
  • 415 ml of applesauce
  • 100 g. brown sugar
  • 118 ml. mild olive oil
  • 60 ml. milk
For the cover
  • 50g. brown sugar
  • ½ teaspoon cinnamon
  • 12 walnuts, chopped
For the applesauce
  • 1 kg of Royal Gala apples
  • 600 ml of boiling water
  • Juice of half a lemon

Preparation
  1. For prepare the apple puree , we heat water in a pot with lemon juice. We peel the apples and add them to the boiling water. Then we reduce the heat and cover. Cook over low heat for 20 minutes or until the apples begin to break. We eliminate the water and mix well until obtaining a smooth puree.
  2. We preheat the oven to 190ºC and grease the molds or place paper capsules.
  3. In a large bowl we mix the dry ingredients: flour, baking soda, cinnamon, nutmeg and salt.
  4. The other container, we beat the puree apple with sugar, oil and milk until a homogeneous mixture is achieved.
  5. We pour this mixture over the dry ingredients and we mix with a spatula or wooden spoon to homogenize.
  6. We fill the molds up to ¾ of its capacity with the mixture.
  7. We mix the topping ingredients and sprinkle evenly over the dough.
  8. Bake 15-20 minutes until they're done.
