Put some excitement in your recipe and give your palate a good and passionate shake with this apple and bacon omelette. Yes, that the Spanish potato omlette it's very good ... but what if I told you that this recipe is juicier, fluffier and faster? Also, as a great friend of mine would say "if you have bacon, the discussion is over."

- 4 eggs
- 2 golden apples
- ½ onion
- 60gr of bacon (in strips or tacos)

- We peel the apples, cut in half and cut as we would the potatoes (in half moons).
- Peel and chop the onion into medium dice.
- Heat plenty of oil in a pan and add the apple and onion. Confit (fry over low heat) throughout in the pan, season to your liking and fry over low heat for 5-8 minutes.
- We remove the fry and drain it, drain it (we use a strainer)
- We pass the oil to a container (with a spoon so that it does not explode, we do not like surprises) and we reserve it.
- Don't clean the pan yet! Take advantage of the remaining oil droplets to sauté the bacon. Once golden, reserve it.
- Now, we clean the pan with absorbent kitchen paper.
- We beat the eggs in a bowl large enough so that it does not overflow when we add the fry (apple, bacon and onion). Season to taste.
- We put the pan back on the fire, add a splash of the oil resulting from the frying (the one we have reserved) and add the mixture.
- We stir subtly with a wooden spoon and wait 15-20 seconds for it to start to set.
- We separate the edges, cover the pan with a plate with a larger diameter than the pan and turn over. We add it again so that it sets on the other side. AND READY!
